Three words: Life. Changing. Ham! (aka Bellota Jamón Ibérico). That’s what you ask for when you go to Mercado Jamón Ibérico. Fair warning- after tasting this Jamón Ibérico de Bellota, supermarket and Costco meats will never be the same again. It just cannot compare to the savoury and nutty, rich, well-marbled, melt in your mouth deliciousness that only the Bellota Jamón Ibérico delivers. So good that even the mayor of Madrid buys from this family owned place! Everyone here was so friendly, the tastings were fun and informative. Like the A5 Wagyu of Japan, this is definitely a splurge, but a splurge worthy of trying if you get the opportunity.
Mercado Jamón Ibérico
A Cortado de Jamón (a master ham carver) can charge upwards of $4000 to cut a leg of it! That’s just his service fee, doesn’t include the cost of the Jamón!
We tried sever styles with the tasting, but our hands down favorites were:
- Jamón Bellota Diamante
- Jamón Bellota Oro
Ibérico hams cure for two to four years, while Ibérico Bellota hams for longer periods. This extraordinarily long curing process is possible because of the huge amount of fat on each ham and, in the case of the Bellota hams, the antioxidant quality of their diets. The outrageously expensive Ibérico Bellota price is due to these black pigs living on a diet of acorns.
